Serves 4

Ingredients

100g dark chocolate – cut into pieces

60 ml whipping cream – minimum 30% fat

10ml milk

3 eggs white

20g mascavado sugar

Preparation

Melt the chocolate: Place the bowl of chocolate over a pot of simmering water on the stovetop.

While it’s melting, pour the whipping and milk in a saucepan and heat slightly over low heat.

Pour the warm cream & milk mixture over the melted chocolate and mix well to create a ganache.

Whip the egg white until stiff peaks form. Add the whipped egg whites to the ganache and mix gently.

Refrigerate for minimum 2 hours before serving.
