One recipe that never fails to impress both my taste buds and my clients is Oat & Almond Cookies. These delightful morsels are not just a guilt-free indulgence but also packed with wholesome ingredients that contribute to your overall well-being. Let me share with you this simple yet delectable recipe!

Ingredients:
- 100g rolled oats
- 125g wholewheat flour
- 100g crushed almond
- 30g muscovado sugar
- 100g butter
- 1 egg
- 1 tsp vanilla essence
- 1 tsp baking powder
- Optional: dark chocolate chips, dried fruits, or shredded coconut for added flavour
Instructions:
- Preheat your oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it with cooking oil to prevent sticking.
- Mix dry ingredients: In a large mixing bowl, combine the rolled oats, wholewheat flour, crushed or chopped almonds, muscovado sugar and baking powder. Stir well to ensure even distribution of ingredients. I personally like the almonds when it is chopped as it adds more texture to the finish product but you can also opt to crush it into a fine powder.
- Rub-in the butter: Add the butter to the mixed dry ingredients and use your fingertips to quickly and lightly rub the flour and butter together until it resembles fine breadcrumbs. Lift your fingers above the bowl while rubbing to help aerate the mixture.

- Add wet ingredients: In a separate bowl, whisk together the egg and vanilla extract. Pour the wet ingredients over the dry ingredients and mix until a thick, sticky dough forms.
- Shape the cookies: Using your hands or a cookie scoop, portion the dough into small balls and place them onto the prepared baking sheet. Flatten each ball well with your fingers or the back of a spoon to form a cookie shape.
- Bake to perfection: Place the baking sheet in the preheated oven and bake the cookies for 15 – 20 minutes, or until they turn golden brown around the edges. Keep an eye on them to prevent over-baking.
- Cool and enjoy: Once baked, remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. This step is crucial as it allows the cookies to firm up and develop their delicious texture. Once cooled, serve and enjoy with a glass of almond milk or your favourite hot beverage!
