Sweet Chilli Ginger Prawn

Ingredients:

  • 1 kg large prawns, deveined
  • 1 tablespoon sesame oil
  • 1 red chilli, finely sliced
  • 1 cm fresh ginger, peeled and thinly sliced
  • 1/4 cup parsley, chopped
  • 1/4 cup sweet chilli sauce

Instructions:

  1. Prepare the Prawns: Ensure the prawns are deveined. Pat them dry with a paper towel to remove excess moisture.
  2. Heat the Pan: In a large skillet or wok, heat the sesame oil over low heat until shimmering.
  3. Sauté Aromatics: Add the sliced ginger and red chilli to the pan. Sauté for 1-2 minutes, being careful not to burn them.
  4. Cook the Prawns: Increase the heat to high and add the prawns to the pan in a single layer. Cook for 2-3 minutes on each side until they turn pink and are cooked through.
  5. Add Sweet Chilli Sauce: Pour the sweet chilli sauce over the prawns, stirring gently to coat them evenly. Allow the sauce to simmer for 1-2 minutes, thickening slightly and glazing the prawns.
  6. Garnish and Serve: Remove the pan from heat. Sprinkle the chopped parsley over the prawns. Serve hot over steamed rice or alongside a fresh salad for a complete meal.

Tips:

  • For an extra kick, leave the seeds in the red chilli or add a pinch of red chilli flakes.
  • Fresh coriander can be used instead of parsley for a different flavour profile.
  • Ensure not to overcook the prawns, as they can become tough. They are done when they turn pink and form a ‘C’ shape.
  • Encourage guests to peel the prawns at the table for a fun, casual vibe.
  • Provide finger bowls with warm water and lemon slices to make cleanup easier.
